bōm dough is a breakfast and coffee café in Cambridge, MA — est. 2022 in Inman Square, now also at Lechmere. We serve doughs from around the world, baked fresh daily, and build the morning on them: sandwiches, burritos, plates and bowls, pastries, coffee and matcha.
The origin
it started with
one bun.
Before there was a menu, there was pão de queijo — Brazilian cheese bread. We tested more than seventy recipes to land on ours: crispy shell, elastic core, no wheat at all. It's still the signature, and still the reason a lot of Cambridge found us.
Then we kept going. France proofs butter and egg into brioche. New York boils a bagel before it bakes. Japan turns rice into a waffle that's crisp and chewy at once. Italy makes potato into pillows. Mexico wraps the whole thing up. Every culture worked out dough — we serve six of them, baked fresh daily.
Get the dough right and the day gets better. That's the whole idea.

The build

Our espresso is roasted just down the street by Broadsheet Coffee Roasters. Our matcha is ceremonial-grade, single-origin, stone-milled. Eggs are cage-free, salmon is premium-grade, dairy is sourced from regional creameries.
Every dough is baked fresh daily and served warm — never under a heat lamp, never older than the morning. Wheat and gluten-free doughs share the kitchen, so ask us about anything and we'll tell you exactly what's in it.
